So when you click get mail, mac mail tells the server stuff has moved (to trash) but does not tell it to do so just yet.
Syncing happens periodically (perhaps based on frequency of get mail in the settings but I am not sure). My get new mail setting is set for an hour since I don't want to constantly be interrupted by new mail all the time. Hope that helps a little.

The first state is what you're seeing - unfortunately Mail.app is not capable of showing the difference between an expunged email or one just marked for deletion. Some more advanced IMAP clients support this two-stage process correctly (Mulberry, for instance), but otherwise you'll just have to put up with it - either expunging via your Windows client, or just leaving it and waiting for the server to expunge deleted mail after whatever interval it is set to do so.
